Scrambled eggs with a twist
This is a twist on the ordinary scrambled eggs. Quite a yummy twist as well. The basil, garlic and tomato in adds so much flavour to the scrambled eggs, making it so yummy!

We made these during out Italy study and have made them quite a few times since.

For these I was able to use our fresh homegrown basil, though when we don’t have any fresh, I use basil that I have dehydrated.

The same goes for garlic. We grow our own, dehydrating the excess to use when fresh is not available. Though you could also use minced garlic in these delicious scrambled eggs.

We also grow our own tomatoes. We have tried a few different varieties, growing a couple at one time.

With our own chickens supplying the eggs, this recipe is made with the freshest homegrown ingredients, making it a delicious, tasty and quick to whip up breakfast one can enjoy!

Scrambled eggs with a twist

Scrambled Eggs with Basil, Garlic and Tomato

These yummy and easy to make scrambled eggs with a twist - tomato, basil and garlic - is a great way to start the day.

Ingredients
 

  • 3 eggs
  • 2 TBSP milk
  • 1 clove garlic, crushed
  • 1 tomato, flesh scooped out and diced
  • 8 basil leaves
Prevent your screen from going dark

Instructions
 

  • Place eggs and milk in a bowl and whisk until combined. Heat oil in frypan over medium heat and add garlic. Fry for 1 minute.
  • Add tomatoes and fry until heated through.
  • Pour egg mixture into pan and leave to set for 1 minute. Using a wooden spoon, push the egg to the centre of the pan and turn. Repeat until the eggs are 2/3 set. Turn off heat. Sprinkle fresh basil and turn over twice again. Slide onto warm toast.
