We don’t eat a lot of cereal, so I have been looking for other ideas of things to have for breakfast. We all love pancakes and purchasing the pre-made jugs would end up being expensive, so I decided to try and make our own, homemade instant pancake mix.

The great thing with this recipe is the way you can make bulk pancake or waffle mix and have it stored in your cupboard. Then when you are ready to use, you add a couple of wet ingredients: egg, oil, and water. I store some of the pancake mix in an airtight container at home and for when we are travelling, I add 2 cups of pancake mix to a ziplock bag and tape the recipe to the front of the bag for easy storage.

It is also more cost effective to make your own pancake mix at home. It is super easy to make and have on hand for fast pancakes when required. Now, all you have to do when you want some yummy pancakes is to mix a scoop of this pancake mix in a bowl with a couple of wet ingredients and your ready to start cooking your pancakes.

Make a large batch of pancakes and enjoy them for the rest of the week.

Tips for Making the Perfect Pancakes

Pancakes are very easy to make and are usually quite forgiving, though here are a few tips to help you make some amazing pancakes.

  • Make sure you skillet or griddle is very hot
  • Don’t make the mistake to over-mix your batter. Not all the lumps need to be removed.
  • Keep the oil or butter by your side to top up your skillet or griddle as needed.
  • The pancakes are ready to flip when bubbles are starting to pop on the surface.

Storing Leftover Pancakes

Leftover pancakes should be left to cool to room temperature.

Then, layer with a sheet of baking paper in between, then seal in a zip-top bag. Store in the freezer.

To reheat, place frozen pancakes on a plate in a single layer and microwave for about 30  to 45 seconds. Then, pop them in the toaster.

Pancake Mix

This pancake mix makes 8 cups of instant pancake mix.

To make it, you will need:

  • 6 â…“ cups plain flour
  • 1 â…“ cups dry milk powder
  • 2 TBSP baking powder
  • 1 tsp Bicarbonate of Soda
  • 2 tsp Salt
  • â…“ cup Caster Sugar

To make this mix, you will need a large bowl.

Add the flour and the milk powder to the bowl.

Stir well to combine.

Next, add the baking powder, bicarb soda and salt.

Mix well, making sure to get these ingredients all through the mixture.

Finally, addd the sugar and mix well.

Store in an airtight container.

Making Pancakes

To make pancakes using this mixture, you will need:

  • 2 cups Pancake Mix
  • 1 Egg
  • 2 TBSP Oil
  • 1 Cup Water

Whisk the egg, oil and water together.

Add the 2 cups of pancake mix.

Stir well to combine.

Heat some oil in a fry pan, griddle or skillet and fry pancakes until golden brown.

Making Waffles

To make waffles using this mixture, you will need:

  • 2 cups Pancake Mix
  • 2 eggs
  • 1 TBSP Oil
  • 1 ¼ Cups Cold Water

Whisk the egg, oil and water together.

Add the 2 cups of pancake mix.

Stir well to combine.

Heat and grease a waffle iron and cook until golden brown.

Ingredients
 

  • 6 1/3 cups plain flour
  • 1 1/3 cups dry milk powder
  • 2 TBSP baking powder
  • 1 tsp baking soda
  • 2 tsps salt
  • 1/3 cup caster sugar

Instructions
 

  • In a large bowl, add flour and milk powder.
  • Stir well to combine.
  • Add the baking powder, baking soda and salt.
  • Mix well, making sure it is all combine.
  • Finally add the sugar and mix well.
  • Store this mixture in an airtight container.

To make pancakes

  • 2 cups of pancake mix (the mix you have stored in the airtight container)
  • 1 egg
  • 2 TBSP oil
  • 1 cup water
  • Whisk the egg, oil and water together and then add to the dry mix.
  • Stir until well combined.
  • Heat some oil in a fry pan and fry pancakes until golden brown.

To make waffles

  • 2 cups pancake mix (the mix you have stored in the airtight container)
  • 2 eggs
  • 1 TBSP oil
  • 1 1/4 cups cold water
  • Whisk the eggs, oil and water together and then add to the dry mix.
  • Stir until well combined.
  • Heat and grease a waffle iron and cook until golden brown.
