Chocolate Mousse Muffins
These chocolate mousse muffins are so easy to make with only three ingredients. They are also made in one bowl which is great for a quick clean up.
This recipe is also a good recipe for teaching kids to cook. They can practice weighing chocolate and flour as well as breaking eggs.
To make these muffins, melt the chocolate in a heat-proof bowl in the microwave or you could melt the chocolate in a double boiler.
Then add the eggs and mix well before adding the self- raising flour.
Divide the mixture between 6 muffin cases and bake.
To serve, sprinkle with icing mixture.

Chocolate Mousse Muffins

Ingredients
- 250 g block of chocolate
- 3 eggs beaten
- 1/4 cup SR Flour
Instructions
- Melt chocolate (in microwave 10 sec intervals until melted).
- Crack eggs into bowl with the chocolate and beat well, then mix in 1/4 cup of SR Flour.
- Mix with a wooden spoon then spoon into patty cake papers.
- Bake in a preheated oven for 20 mins at 180˚C.
- To serve, sprinkle with icing mixture.
