Homemade Ice Magic Shell

This easy to make ice cream topping can changed up in many ways to suit your needs and the supplies you have at home. This ice magic sets in the exact same way as the versions you can purchase at the grocery store. How does it do this? It is all down to the coconut oil, which is a liquid when hot and a solid when cold.

This homemade 2-ingredient chocolate ice cream topping will be a liquid until it hits the cold ice cream. Then it will immediately start to firm up.

Coconut oil

This oil has a fairly neutral flavour. Depending on how much you use, it may add a slight coconut flavour to your topping.

If you want a thinner topping, you can add a little more oil to thin it out.

Chocolate

For this recipe, I used milk chocolate, though you can use whatever chocolate you have handy – white, dark, even flavoured chocolate blocks such as caramilk, and top deck. You could also use peanut butter flavoured chocolate that melts as well.

Dairy Free

If you want to make a dairy free version, then switch out the chocolate for dairy free chocolate.

This batch makes around 300 ml of chocolate ice magic shell, though if you are needing more than that, simply double or triple the recipe and divide into small jars. This would make a great Christmas gift idea to add to a basket or more.

Making Ice Magic

To make this homemade ice magic, you will need two simple ingredients – chocolate melts and coconut oil.

Simple melt the chocolate and coconut oil together either in a saucepan on the stove or in the microwave and stir until completely combined.
Pour into a clean, sterilised jar and store in the pantry.

Using Ice Magic

This chocolate topping hardens when it is poured over a cold item. The sudden cold temperature causes the coconut oil in the mixture to harden, when it comes into contact with cold foods.

Due to this reaction, this chocolate topping is not only good for pouring over ice cream, but can also be used as a dip for fresh fruit. It can also be poured over frozen fruit.

Storing Ice Magic

Due to the way this mixture works, it is best stored at room temperature in the pantry. In some cooler climates, it may harden up a little, so just pop it in the microwave for a couple of seconds to a minute, until it turns back into its liquid form.

Ice Cream Topping Tips

  • This recipe could easily be halved or even doubled.
  • Before making this recipe, make sure that your saucepan and jar are completely dry. Water can seize up the chocolate, which will ruin your topping.
  • This recipe can be made in the microwave. Just add the ingredients to a microwavable jar and melt in short, 30-second increments until fully melted. Stir after each burst.
  • Once the ice cream topping has melted, it will be hot. Let it cool down for around 20-30 minutes before using it, as if it is too hot, it will start to melt your ice cream.
