Making a Pumpkin Mug Cake

To make this mug cake, you will need a microwave-safe mug that has a capacity of at least 300g (10 oz) to prevent anything from overflowing.

Lightly grease the inside of the mug with oil or melted butter.

Pumpkin Mug Cake adding the dry ingredients

Add the flour, sugar, baking powder and pumpkin pie spice to the mug and stir until well combined.

Pumpkin Mug Cake adding the wet ingredients

Add the pumpkin puree, milk, oil and vanilla extract to the mug and mix everything together to make a smooth batter.

Pumpkin Mug Cake ready to cook in microwave

Place the mug in the microwave and cook on high for 1 ½ minutes to 2 minutes. Cooking time will vary depending on your microwave’s power. This cooking time is based on using a microwave with a wattage of 1000 watts. The cake should rise and firm up.

To check that the mug cake is done, insert a toothpick into the middle of the cake. If it comes out clean, or with only a few moist crumbs, the cake is ready. If not, microwave in 15-second intervals until done.
