Why White Pine Needles?
White pine needles contain high amounts of vitamin C. These needles are great for helping to loosen mucus while supporting the lungs, chest and respiratory system. White pine needles can be used in a tea or in a syrup. The syrup is more potent, especially when raw honey is added as honey also contains lots of its own health benefits.
When collecting your own white pine needles, ensure you are collecting from the right tree, and make sure you are collecting from trees that aren’t being treated with chemicals. A good way to make sure which is the correct tree, remember white has 5 letters and white pine trees have 5 needles per bundle.
Using White Pine Needle Syrup
Smelling like a pine forest, with an interesting, yer delicious flavour, this syrup makes a wonderful addition to:

- Smoothies
- Drinks
- Cocktails
- Take for immune support on its own
- Use as part of a glaze or marinade
- Drizzle over a warm cake
Though fresh pine needles are best for flavour and aroma, dried pine needles work just as well. Though, you may want to steep the dried pine needles for slightly longer.
Ingredients for Pine Needle Syrup
To make around 30 ounces (just under 900g) of this syrup, you will need:
- 2 Cups Fresh Pine Needles
- 2 ½ Cups Boiling Water
- 1 Cup Honey
Making Pine Needle Syrup
Add the pine needles to a glass jar.
Pour over the boiling water and let sit for about 1 hour.
Strain out the needles and discard.
Reheat the strained tea if needed, and add the honey until mixed in.
Using Pine Needle Syrup For Coughs
For kids over 1 years of age, take 1 teaspoon.
For adults, take 1 tablespoon.
Storing Pine Syrup
If you have added the honey to your syrup, it should last up to 3 weeks in the fridge when stored in an airtight container.
To preserve for up to 3 months, store in the freezer.
