Anzac Biscuits

Anzac Biscuits
Anzac Day is celebrated on the 25th April every year here is Australia. Anzac biscuits are shared as everyone remembers what happened to the Australian and New Zealand troops in Gallipoli in World War I. During the war, these biscuits were made by the soldiers’ wives and sent to them using ingredients that do not spoil easily, and kept well during transportation.

With only seven ingredients, these biscuits are quite easy to make. Just add the plain flour, rolled oats, caster sugar, and desiccated coconut to a bowl. In a small saucepan, add the butter and golden syrup. Melt over low heat, while stirring to make sure the ingredients combine well.

Mix the bicarbonate of soda with the water before adding to the melted butter and syrup. This mixture will then foam and bubble up. Remove from the heat and pour into the dry ingredients. Mix until fully combine. Roll into balls and place on lined baking trays. Press down slightly with a fork to flatten the tops.

Make sure that you space out the biscuits as they can spread during baking.
