This Cinnamon Ripple Banana Loaf is a fun and delicious twist on the normal banana loaf, perfect with a cuppa for morning or afternoon tea.

Cinnamon Ripple Banana Loaf

I usually make this banana loaf when we have lots of bananas that are on their way out. The cinnamon ripples add a lovely twist to the normal banana loaf. You could ice this loaf with lemon icing, though I tend to leave it as is or, while warm, brush with a little melted butter and sprinkle with a little cinnamon sugar.

You could also heat up a slice for a few seconds in the microwave and spread with a little butter and enjoy for morning or afternoon tea with a cuppa.

Ingredients
  

Banana Loaf

  • 3 bananas, mashed
  • 3/4 cup caster sugar
  • 2 TBSP butter
  • 1 egg, beaten
  • 2 cups SR Flour
  • 2 TBSP milk
  • pinch salt
  • 1 tsp vanilla extract

Cinnamon Ripple

  • 1/3 cup white sugar
  • 2 TBSP cinnamon

Instructions
 

Banana Loaf

  • Preheat oven to 180˚C and grease loaf tin.
  • Beat the butter and sugar with an electric mixer.
  • Add the egg and vanilla and mix well.
  • Stir through the banana and milk.
  • Slowly fold through the flour and salt.

Cinnamon Ripple

  • Combine the sugar and cinnamon in a bowl, mixing well to combine.
  • Add a thin layer of the banana cake mix into the loaf tin and spread it out the best you can.
  • Sprinkle about half of the cinnamon and sugar mixture on top.
  • Spread another layer of the cake mix on top the cinnamon mix.
  • Sprinkle again with the cinnamon mix and then top with the rest of the banana cake mix.
  • Bake in the oven for 40 minutes or until a skewer comes out clean.
