Lavender sugar is made from sugar that has been infused with lavender flowers. As it is infusing, the sugar takes on the delicious lavender flavour that can be used is so many amazing ways!
The best thing about making it at home, is that you can create a batch to suit the flavour intensity you want in, for a very low price, in just a couple of minutes.
Lavender
There are so many different species of lavender that can be grown these days, though not all of them should be used for baking. The most common edible lavender to use is English Lavender or True English Lavender (Lavandula angustifolia).
And remember, when using lavender, a little goes a loooong way! Too much can create a soapy taste.
With all things flowers and herbs, there are some wonderful benefits that can be found when using lavender. Lavender is known for calming and soothing and helping to alleviate stress and anxiety. The aroma of lavender in your dishes is soothing and helps to create an inviting effect.
Fresh or Dried Lavender
If you have fresh lavender, it is best to dry it before using. This can be done by tying the stems together with string and hanging it upside down in a cool, dark place for up to a week.
Though, if you do want to use fresh flowers, you will need to keep an eye on the end product as the moisture from the flowers can cause the sugar to clump and the product to go off.
Using Lavender Sugar
This sugar is so versatile! So ways that it can be used are:
- Used instead of plain sugar in baked goods such as cakes, cookies, cupcakes, pies
- Add to whipped cream for a lovely floral flavour
- To sweeten tea, iced tea, coffee or lemonade
- To rim cocktail glasses
- Use to make a simple syrup – just combine water, this lavender sugar in a saucepan and bring to a low simmer. Cook until the sugar is dissolved and the syrup has thickened; about 20 minutes.
- Add to homemade jelly or jams
- Sprinkle on pancakes and waffles
- Use to make a delicious lavender ice cream
- Mix a small amount through some butter and spread on things such as biscuits, sugar cookiesscones and breads
- As a garnish by sprinkling over a warm cake that has just come out of the oven or on cookies before baking or even on candy
- Sprinkle on fresh fruit including berries, stone fruit, pears and citrus

Storing Sugar
This sugar should last for up to 6 months when stored in an airtight container at room temperature.
Keep the jar in a cool, dark place away from and direct light or heat.

- White Sugar
This recipe can easily be scaled to make the amount that you want. I will say that it is easier to make multiple small batches than one large batch all at once.
Making Lavender Sugar
Place the dry lavender flowers in a grinder or a food processor and grind until they are a powder.
Mix the lavender powder through the sugar thoroughly.
Place in an airtight glass jar and it is ready to use.
For a finer sugar, the sugar can be ground in the grinder with the lavender.
