Orange extract is used to flavour marinades, butter, chutney, syrup and sauces as well as to add a lovely flavour to vegetable dishes. Next time you have an orange, use the peel to make your own orange extract.

How to Make Orange Extract

Though this recipe only uses two ingredients, and is low maintenance to make, it does take about 6 weeks until it is ready to use as the vodka needs time to pull the orange zest out of the peels, making the lovely orange extract that is used in baking or cooking.

The jar that you use to make and store this extract in is important and needs to have a secure and airtight seal to keep the extract fresh in your pantry for months.

Use a peeler to peel thin strips of zest from your orange and place it in your glass bottle or jar. When you zest your orange, try to take just the yellow bit off as the white bit – the pith – can be bitter which could make your extract not that nice. Cover with vodka, add the lid and sit in a dark, cool place for about 6 weeks. Every few days, gently tilt the bottle upside down to mix the liquid inside.

When it reaches the intensity that you prefer, strain out the peels and pour the extract into a clean jar.

For those who can’t use vodka, this extract can also be made with food grade glycerin, but it does take much longer to infuse. If you do use glycerin, it may take 8 weeks or longer to get to your liking.

How to use with Homemade Orange Extract

Keep your extract in a secure, airtight container in a cool, dark place out of direct sunlight, ready for use when needed.

Orange extract is used to flavour marinades, butter, chutney, syrup and sauces as well as to add a lovely flavour to vegetable dishes. It can also be used to flavour cakes and muffins.

Next time you have an orange, use the peel to make your own orange extract to use in marinades, butter, chutney, syrup and sauces.

Servings 1 cup

Ingredients
  

  • 1 orange, zested
  • 1 cup vodka

Instructions
 

  • Peel thin strips of zest from the orange.
  • Place the zest in the glass bottle.
  • Fill the bottle with 1 cup vodka.
  • Every few days, tilt your bottle upside down to gently mix the liquid inside.
  • After 6 weeks, you have extract.
  • When it reaches the intensity you prefer, strain the peels and pour extract into a clean jar.
