Holding it Together – Science ExperimentSome liquids do not mix well. Liquids such as water and oil, if you mix them together, they end up separating.  You need a substance that can hold the liquids together to make a stable mixture: an emulsifier.

Holding it Together a

What you need:

4 clear jars / plastic cups
water
oil
one egg yolk
one tsp flour
one tsp mustard
one tsp dishwashing detergent

Number each jar/cup from 1 to 4.

Add equal amounts of water and oil to each cup. I added 1/3 cup of water and 1/3 cup oil.

Then:

Cup 1 – add 1 egg yolk
Cup 2 – tsp flour (I used SR Flour)
Cup 3 – tsp mustard
Cup 4 – tsp dishwashing detergent

Then if you are using jars with lids, put on the lids and give them a shake or if you are using cups, give them a good stir.

Let the liquids sit for 10 minutes.

Check out what has happened to each of the jars/cups.
Which ones separated? Which ones have turned the oil and water into an emulsion?
