Add the marshmallows, jellybeans, almonds and whatever else you want to add, to a large mixing bowl.
Place the chocolate in microwaveable bowl.
Slowly melt in short 10-30 second bursts, stirring in between. The chocolate could also be melted in a double boiler.
When the chocolate has melted, pour on top of the marshmallow mixture.
Stir until everything is covered with chocolate.
Place in small lined baking tray.
Press the speckled chocolate Easter Eggs into the top of the rocky road.
Refrigerate for 2 hours or until set.
Let it sit on the bench for 5 – 10 minutes then, using a warm knife, cut into squares to serve.
Store in an airtight container in the fridge for up to one week.
This rocky road can also be frozen in a freezer-safe container for up to two months. Just note that if you use biscuits or Rice Bubbles or anything similar, they won’t be crisp when thawed.
To thaw frozen rocky road, place in the fridge in an airtight container in the fridge overnight or thaw at room temperature for around half an hour.
