Rocky road is lovely and this no bake Easter Rocky Road is no exception. Normally, I use milk chocolate and add whatever we feel like at the time, though if you wanted to make it a little more Eastery, this time I added some lovely speckled jelly beans and speckled Easter eggs.
No Bake Easter Rocky Road
For rocky road, you can use a variety of different mixtures. Marshmallows, whether the mini ones, or if using the large ones, cut with a pair of scissors into smaller pieces. We love rocky road with jelly lollies, clinkers, and a handful of nuts. I prefer to use milk chocolate, though you could use dark or a mixture of both dark and milk chocolate. For this rocky road, I used milk chocolate, chopped almonds, M&M’s crispy speckled Easter eggs, speckled jelly beans and white mini marshmallows.

Making the Rocky Road

Add the chopped or mini marshmallows, jelly lollies, nuts, cranberries, coconut and whatever else you want to add, to a large mixing bowl.

Place the chocolate in microwaveable bowl.

Slowly melt in short 10-30 second bursts, stirring in between. The chocolate could also be melted in a double boiler.

When the chocolate has melted, pour on top of the marshmallow mixture.

Stir until everything is covered with chocolate.
- Place in a small lined baking tray.
- Press the speckled chocolate Easter eggs into the top of the rocky road.
- Refrigerate for 2 hours or until set.
- Let it sit on the bench for 5 – 10 minutes then, using a warm knife, cut into squares to serve.
- Store in an airtight container in the fridge for up to one week.
- This rocky road can also be frozen in a freezer-safe container for up to two months. Just note that if you use biscuits or Rice Bubbles or anything similar, they won’t be crisp when thawed.
- To thaw frozen rocky road, place in the fridge in an airtight container in the fridge overnight or thaw at room temperature for around half an hour.

Instructions
