Combine water, sugar and lime juice in a saucepan.
Heat, over low heat, stirring to dissolve the sugar.
Bring to the boil.
Turn off the heat and pour into your glass jars. You can can this recipe - water bath for 15 minutes in the correct jars.
Store your lime simple syrup in refrigerator for up to a month.
When you are ready to use it, simply add 2 cups of cold water to each cup of concentrate that you use. It does not make a lot; you can double or triple the mixture if you wish.
