To press tofu, wrap the block in paper towels. Place the tofu on a plate or cutting board and put a couple of heavy books or a cast iron pot on top of the tofu.
Let sit, while pressing for about 20 minutes. Then unwrap and it is ready to use. You can skips these two steps if you have a super firm variety of tofu.
Tofu Bites
Slice the tofu in half lengthways and then into small pieces, until you have around 32 pieces.
In one small bowl, add the arrowroot flour.
In another small bowl, add the almond milk.
In a third bowl, add the Panko breadcrumbs, olive oil, smoked paprike, garlic powder and salt and pepper to taste.
Taking one piece of tofu at a time, roll in the arrowroot powder, then in the milk and then in the breadcrumb mixture, making sure to coat well with each step. Repeat until all tofu is coated.
Set the airfryer to 175˚C and add a layer of tofu.
Air fry for 7 minutes.
Turn the tofu over and cook for another 5 minutes or until desired crispiness is achieved.
If you don't have an air fryer, you could bake in the oven at 200˚C for 18-20 minutes.
Sauce
To make the sauce, mix the mayonnaise and the sriracha together until smooth.
