In a medium bowl, add the plain flour, baking powder, bicarbonate of soda, cinnamon, nutmeg and salt. Whisk together and then set aside.
In a large bowl, beat the butter and sugar together until light and fluffy - about 3 to 4 minutes.
Add the eggs into the butter mixture one at a time, beating after each addition.
Mix the vanilla into the butter mixture.
Gradually add the dry ingredients into the wet mixture, alternating with the sour cream. Begin and end with the flour mixture. Mix until just combined.
Fold in the chopped apples.
Pour the batter into the prepared cake pan and spread it evenly.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the centre of the cake comes out clean.
Allow the cake to cool in the pan for 10 minutes before removing and transferring to a wire rack to cool completely.
