Before making these gummies, make sure you have your broth ready if making it yourself.
Peel, chop and boil 1 - 2 sweet potatoes until they are soft.
Drain and mash until all the lumps are gone. Place on a sieve to remove as much liquid as possible. Set aside to cool until it is needed.
Heat the broth until it is boiling. This can be done in a microwavable safe jug or in a saucepan over low heat.
Gently mix the gelatine into the hot broth until it is fully dissolved.
Stir in the sweet potato until fully mixed.
Allow the mixture to cool slightly before pouring into the moulds.
Place the moulds onto a tray or cookie sheet. Pour the mixture into the moulds using a dropper if necessary.
Place the tray with the moulds on it into the fridge until the gummies are set - usually around 45 minutes to one hour.
When set, remove from moulds, and store in the fridge in an airtight container.
Keep an eye on these treats as they may become mouldy. If they do, throw them out. It is better to make smaller batches more often, than large batches less often.
