Place the apple slices in a saucepan with water, sugar and cinnamon and stir to mix.
Boil the apples until soft. Let cool.
To make the Glaze
Mix the sugar (2 TBSP) and water in a microwavable bowl and heat for 30 seconds, stir and then heat again for another 30 secs. Let cool while preparing the puff pastry.
To Make the Puff Pastry Turnovers
Preheat the oven to 200˚C.
Cut four circles out of each piece of puff pastry, making 24 circles all up.
Fold the circles in half and place them on lined baking trays. Brush with the prepared glaze, and sprinkle with a little extra castor sugar.
Bake in the oven until golden brown, about 10 - 15 minutes. Remove from oven and allow to cool completely.
To Make the Cream
Place the cream, icing sugar and vanilla in a large bowl. Whip the cream until thick.
To Make the Apple Turnovers
Split the pastry through the middle with a sharp knife. Place one TBSP of apple mixture into the middle of the pastry.
Pipe or spoon the whipped cream into the apple turnover. Place on a plate and sprinkle with icing sugar. Enjoy!
Instead of making your own apple mixture, you can use canned apples, an 800g can would work well.
Instead of apples, you could try Nutella or peaches.
Instead of apple chunks, you could also puree it before placing it inside the apple turnovers.
