In a medium-size bowl mix gelatin, honey, and the elderberry syrup. Let sit while you heat the water until hot but not boiling.
Pour the hot water into your gelatin mixture and whisk until smooth. The hot water will help resolve the gelatin so it will solidify evenly. Break up any chunks with the side of the whisk to ensure there are no floating lumps of gelatine.
Choose a mold that is about 1/2 teaspoon for the perfect size gummies. Place cookie sheets under silicone or plastic moulds to make clean up easy and prevent spilling when you move your moulds for cooling.
Before your gelatine can set transfer to your molds. An injector syringe or turkey baster makes filling the molds easy and mess-free.
Place your molds in the refrigerator for 1 to 2 hours to help speed solidification. Store your elderberry gummies in an airtight container inside your refrigerator for the longest shelf life.
