Preheat the waffle iron.
Spray the waffle iron with cooking spray or rub with a little melted butter.
In a large bowl, whisk together the flour, baking powder, sugar, cinnamon, salt and cocoa and set aside.
In a small bowl, whip the egg whites until soft peaks form and set aside.
In a small jug, combine the vanilla extract, milk, egg yolks, and melted butter.
Add the wet ingredients into the dry ingredients and mix until fully incorporated.
Fold through the egg whites.
Pour the mixture into the waffle iron and cook as per your waffle iron instructions.
Serve with ice cream, whipped cream, berries, chocolate topping or any other toppings of your choice.
