You have created an acid-base reaction in your mouth. What's Happening? The citric acid is the acid. The bicarb soda is the base. Mixed with saliva they create a gas. It is the carbon dioxide bubbles that give sherbet its fizz. The icing sugar is needed to make the sherbet sweet and the jelly crystals add flavour.
