Coconut Raspberry Muffins

Ingredients

  • 5 cups SR Flour
  • 60 g melted butter
  • 400 ml milk
  • 200 g desiccated coconut
  • 1 cup caster sugar
  • 1 egg
  • 1 1/2 cups frozen raspberries
  • 100 g white chocolate coarsely chopped

Instructions

  • Preheat oven to 180C. Grease muffin tin. Mix all ingredients toghter until well combine.
  • Pour into muffin tin. Bake for 20-25 mins. Cool for 5 mins before turning out.
  • Makes 12 large muffins.
