This easy to make White Christmas Slice contains only six ingredients – and no copha. Though traditionally made with glacé fruit, coconut, sugar and Rice Bubbles, there are many variations that have been used over the years.
White Christmas Slice
For those that haven’t heard of White Christmas Slice before, it is a popular slice in Australia that is made with Rice Bubbles, coconut and dried fruit. Traditionally, it was made with copra, though this recipe is made using white chocolate.
This easy, no-bake slice just screams Christmas! A bit like rocky road, with Rice Bubbles, and fruit, it is covered in a delicious layer of white chocolate.
The secret to the most delicious slice is good quality ingredients, especially when it comes to the white chocolate. This medley of nuts, fruit, coconut and Rice Bubbles held together with quality white chocolate and no copha. This creamy, sweet slice is super easy to make, melting the chocolate in the microwave before adding in the rest of the ingredients.
With the festive season being always so busy, this slice can be whipped up in a matter of minutes, to be used in lunchboxes, for morning or afternoon tea or to take when visiting with family and friends.
It also makes a great gift idea. Wrap it up in a jar with a pretty ribbon to give to all those special people in your life this festive season.
White Christmas Variations
- Try using Rice Krispies or Coco Pops instead of Rice Bubbles
- Desiccated coconut can be used instead of shredded coconut
- Instead of pistachios, try using slivered or toasted almonds, or macadamias
- Glacé cherries or glacé pineapples could be used instead of dried cranberries
- A tsp of vanilla extract could also be added to the mixture
- Raisins could be used instead of sultanas
- You can use any variation of mix-ins, though do try to keep the total amount of nuts and fruit to 2 cups total.

Storing White Christmas Slice
Store in an airtight container in the fridge for up to 1 week.
Making White Christmas Slice
makes 25 pieces – prep 10 mins, chilling time 4 hours
To make this slice, you will need:
- 2 ½ cups – 100g Rice Bubbles
- ½ cup 50g – shredded coconut
- ½ cup – 75g pistachios
- ½ cup – 80g sultanas
- ½ cup – 60g dried cranberries
- 3 cups – 600g white chocolate
Line a slice tray with baking paper, ensuring that the paper goes well above the top of the sides..
In a large mixing bowl, add the Rice Bubbles, coconut, chopped pistachios, sultanas and cranberries. Mix to combine.
In microwaveable jug or bowl, add the white chocolate. Heat in 30 second increments, stirring between each heat session, until melted and smooth. This step can also be done in a double boiler.
Pour the melted chocolate over the Rice Bubble mixture and stir quickly to combine.
Transfer the mixture to the prepared tray and press down using the back of a spoon.
Place the slice in the fridge for at least 4 hours or until set.
Once set, take out of fridge and leave on the bench for around 15 minutes before cutting into small squares to serve.
