Enjoy this no-bake White Chocolate Rocky Road slice this Christmas. With only a few ingredients, it is quick and easy to make, taking only around 15 minutes.
White Chocolate Rocky Road
This delicious white chocolate rocky road is a fun Christmas spin on the traditional rocky road. I have also made rocky road trees and a rocky road wreath which make lovely centrepieces and can be made using this same recipe.
For rocky road, you can use a variety of different mixtures. Marshmallows, whether the mini ones, or if using the large ones, cut with a pair of scissors into smaller pieces. We love rocky road with jelly lollies, clinkers, and a handful of nuts. I prefer to use milk chocolate, though you could use dark or a mixture of both dark and milk chocolate.
Rocky Road Variations
Rocky road can be made with a variety of different ingredients. Choose the ingredients that you enjoy the most, to create a delectable rocky road wreath. Some variations we enjoy are:
- walnuts
- pistachios
- macadamias
- coconut
- glace cherries
- shortbread, chopped
- raisins
- sultanas
- mint chocolate pieces
- Tim Tams, broken up
- macadamia nuts
- Turkish delights
- dried cranberries
- goji berries
Making the Rocky Road

Add the chopped or mini marshmallows, jelly lollies, nuts, cranberries, coconut and whatever else you want to add, to a large mixing bowl.

Place the chocolate in microwaveable bowl.

Slowly melt in short 10-30 second bursts, stirring in between. The chocolate could also be melted in a double boiler.

When the chocolate has melted, pour on top of the marshmallow mixture.

Stir until everything is covered with chocolate.
- Refrigerate for 2 hours or until set.
- Let it sit on the bench for 5 – 10 minutes then, using a warm knife, cut into squares to serve.
- Store in an airtight container in the fridge for up to one week.
- This rocky road can also be frozen in a freezer-safe container for up to two months. Just note that if you use biscuits or Rice Bubbles or anything similar, they won’t be crisp when thawed.
- To thaw frozen rocky road, place in the fridge in an airtight container in the fridge overnight or thaw at room temperature for around half an hour.

- 2 ¼ Cups Mini Marshmallows 150g
- ½ Cup Cranberries or Glace Cherries 60g
- ½ Cup Pistachios 75g
- ½ Cup Desiccated or Shredded Coconut 30g
- ¼ Cup Turkish Delight or Red Jelly Lollies 45g
Instructions
