Refrigerator Pickles
This delicious recipe gives you 3 pint jars of refrigerator pickles, though you can double the recipe if you have all the ingredients.
Cucumbers
The best cucumbers to use are ones that have been freshly harvested. Pick them fresh in the morning, before heading inside to whip up a few jars of delicious refrigerator pickles.
Pickle Ingredients
To make these delicious pickles, you will need:
- 4 cups thinly sliced pickling cucumbers
- 1 cup thinly sliced onions
- 1 cup sugar
- ½ cup apple cider vinegar
- 1 TBSP salt
- ½ TBSP celery seed
Supplies that you will need include:
- 3 pint size mason jars with rings and lids
- Medium size bowl
- Canning funnel (helpful though not required)
Pickle Instructions
Cut the cucumbers into spears or thin slices and add to a medium bowl.
Slice the onions into rings and add to the bowl with the cucumbers.
Sprinkle the onion and cucumbers with the salt and the celery seeds and thoroughly mix through.
Add the sugar to the bowl.
Add the apple cider vinegar to the bowl.
Mix thoroughly.
Pour the mixture into clean mason jars, dividing the apple cider vinegar juice between all the jars.
Cover the jars with the lids and rings and place in the fridge.
Leave in the fridge for up to one week, before enjoying.
Notes
- You will not need canning equipment to make these pickles, as they can be placed in the fridge.
- These yummy pickles can be eaten after 24-48 hours, though if you let them sit for up to one week before eating, they have more time to absorb the flavours.
