This Pavlova Wreath is a great centrepiece for a dessert table in this hot, summer Christmas here in Australia. Easy to prepare and looking so delicious, you can top it with your choice of toppings.
Pavlova Wreath
For this pavlova wreath, I used mini pavlovas from Woolworths, though you could easily make your own with this basic meringue recipe. If making your own meringues, line a baking tray with baking paper and draw a large circle in the middle of the paper. Then sprinkle with cornflour, to stop the meringue from sticking and then dab large dollops of the meringue mixture on the circle line on the baking paper. Bake as usual, cool and decorate just before serving.
For this meringue, I decorated it with whipped cream that I add a small amount of icing sugar and vanilla extract to as I whipped it. I then covered the meringues with dollops of cream, before adding a variety of berries which included blueberries, raspberries and strawberries.
I also used some of the berries out of a tin of mixed berries that I picked up at Woolworths, as well as some of the syrup to drip over the meringue.
I add some bright green colour with berries and cream mint leaves that I have growing in the garden.
