Tea eggs are popular during Chinese New Year and are served to promote prosperity and wealth for the new year.
To make these Tea eggs:
Boil eggs for about 10 minutes and then remove then from the water. Let them cool and then crack the shells all over by tapping lightly with a metal spoon.
Boil 2 tablespoons of black tea with half a litre of water for 5 minutes. Place the cracked eggs in the tea and leave until cool.
When the eggs are cool, carefully remove the shell. You will see the marbled pattern the tea has made on the egg whites.
