Ingredients

  • 400 g white chocolate chopped
  • 1 can (397g) condensed milk
  • 2 tsp lemon extract
  • 150 g icing sugar, sifted
  • 7 meringues, crushed
  • yellow food colouring, optional

  • Line a lamington tray - around 7x10inch with high edges - with baking paper.
  • Crush the meringues and set aside until needed.
  • Place the white chocolate, condensed milk and lemon extract into a saucepan and melt on low heat, stirring often so that the bottom doesn't burn.

  • Remove the saucepan from the heat and stir in the icing sugar until well combined.
  • Pour in 3/4 of the crushed meringues and stir through quickly.
  • Pour the mixture into the prepared tin and sprinkle over the rest of the crushed meringus, pressing them gently into the top of the fudge.
  • Store in refrigerator for at least 3 - 4 hours to set.
  • When set, remove fro the fridge and cut into squares.
  • Store in an airtight container in the fridge for 2 - 3 weeks.

I so want to make this. I saw you featured at Success U. Is lemon essence like lemon extract?

The original recipe said to use lemon extract. I only had lemon essence in my cupboard, so I just used that. It may taste a little less lemony with the extract.

What a fantastic idea! I love lemon but I never would have thought of adding it into fudge. Pinning 🙂
