Lemon Meringue Fudge
This delicious fudge is quick and easy to make and tastes delicious. For this recipe, I use my homemade condensed milk, lemon extract and meringues. Just make sure that your meringues are nice and crunchy when using them in this fudge recipe.

Lemon Meringue Fudge
Simple Living. Creative LearningThis lemon meringue fudge is soft, with bits of broken up, crunchy meringue spread throughout it. It tastes delicious and goes well with a cuppa.
Ingredients
- 400 g white chocolate chopped
- 1 can (397g) condensed milk
- 2 tsp lemon extract
- 150 g icing sugar, sifted
- 7 meringues, crushed
- yellow food colouring, optional
Instructions
- Line a lamington tray - around 7x10inch with high edges - with baking paper.
- Crush the meringues and set aside until needed.
- Place the white chocolate, condensed milk and lemon extract into a saucepan and melt on low heat, stirring often so that the bottom doesn't burn.
- When the chocolate is melted and the ingredients are mixed together well, add a couple of drops of yellow food colouring, if using.
- Remove the saucepan from the heat and stir in the icing sugar until well combined.
- Pour in 3/4 of the crushed meringues and stir through quickly.
- Pour the mixture into the prepared tin and sprinkle over the rest of the crushed meringus, pressing them gently into the top of the fudge.
- Store in refrigerator for at least 3 - 4 hours to set.
- When set, remove fro the fridge and cut into squares.
- Store in an airtight container in the fridge for 2 - 3 weeks.

The original recipe said to use lemon extract. I only had lemon essence in my cupboard, so I just used that. It may taste a little less lemony with the extract.
