Australia Day is coming up on the 26th January and we have been learning about this great South Land that we live in. As lamingtons are an original Australian dessert, we read “The Lamington Man’ by Kel Richards, which our boys really loved. After reading this book, we decided to make some lamingtons, with a twist. We made them in the shape of a Lamington Man.
To make these lamington men, we first made a vanilla cake which we baked in a large baking tray. Usually when I make a cake in this tray, I make two cake batters
Lamington Men

- 125 g butter
- 2/3 cup caster sugar
- 2 eggs
- vanilla essence
- ½ cup milk
- 2 cups Self-Raising Flour
- Icing;
- 1 ½ cups icing sugar
- 2 TBSP cocoa
- boiling water
- vanilla essence
Instructions
- Beat the butter and the sugar together to a cream and then add a couple of drops of vanilla essence.
- Mix well and then add the eggs, one at a time. Mix the eggs in well.
- Add the flour and milk alternately until mixed to a soft dough.
- Turn into a greased lamington or baking tray.
- Bake in a moderate oven for about 30 minutes or until cooked through.
- Leave in tray for about 5 minutes before turning out and cooling completely on a wire rack
To make the icing
- Sift the icing sugar in to a bowl.
- Blend the cocoa with a little boiling water.
- Work the cocoa into the icing sugar, adding more water if necessary.
- Add a few drops of vanilla essence and mix well.

Ooh, yum! I love lamington’s – we made/had them the for the first time this summer for my daughter’s Aussie birthday party! Will have to track down a copy of this book 😉
