If you are using fresh elderberries be sure to remove all of the stems and leaves from your harvest. Only the berries and flowers are safe to consume from the elderberry plant. Using dried elderberries from a trusted source is the easiest way to make your own elderberry gummies.
Elderberry syrup
To make elderberry gummies you will need elderberry syrup. You can purchase your favourite brand at the store or make your own elderberry syrup to use as the base for your elderberry gummies. This is the recipe I use to make my elderberry syrup.
Make Elderberry Gummies
To make elderberry gummies, you will need:
- 1 cup elderberry syrup
- 1/4 cup gelatine powder
- 1/4 cup honey
- 1/2 cup hot water
In a medium-size bowl mix gelatin, honey, and the elderberry syrup. Let sit while you heat the water until hot but not boiling.
Pour the hot water into your gelatin mixture and whisk until smooth. The hot water will help resolve the gelatin so it will solidify evenly. Break up any chunks with the side of the whisk to ensure there are no floating lumps of gelatine.
Choose a mold that is about 1/2 teaspoon for the perfect size gummies. Place cookie sheets under silicone or plastic moulds to make clean up easy and prevent spilling when you move your moulds for cooling.
Before your gelatine can set transfer to your molds. An injector syringe or turkey baster makes filling the molds easy and mess-free.
Place your molds in the refrigerator for 1 to 2 hours to help speed solidification. Store your elderberry gummies in an airtight container inside your refrigerator for the longest shelf life.
Use one gummy for children and two gummies for adult servings. For best results use your elderberry gummies daily to boost the immune system and prevent illness. If you get sick they can be used to help speed healing by boosting your natural immune response.
