Teriyaki Sauce
It happens quite a bit. I’m looking for a sauce, seasoning or condiment like this taco seasoning, hollandaise sauce or garlic aioli, for a dish and find that I don’t have any hand like I though I did. Living out of town means a bit of time and effort to get to the grocery store. So, I whip up my own, with ingredients that I do have on hand.
This thick sauce is popular all around the world. With its robust savoury flavour, it pairs well with many dishes, especially for those when cooking on the bbq.
Using Teriyaki Sauce
This sauce is very versatile, adding its delicious flavour to a variety of dishes, making it great for:
- Marinading meat, poultry and tofu – for a thinner sauce for marinading, omit the cornflour
- Brushing over roast vegetables before cooking or over vegetables that you are going to cook on the bbq
- As a base for stir-frys
- As a sticky glaze for chicken, pork, tofu and salmon
- Use as a dipping sauce for spring rolls, dumplings and more
- Adding a burst of flavour on sandwiches, rolls, burgers and wraps
- Drizzling over noodles
- As a salad dressing
Storing Homemade Teriyaki Sauce
Let the sauce cool and then pour into a glass jar. Add the lid and place in the fridge for up to one week.

Making Teriyaki Sauce
To make about 1 cup this homemade teriyaki sauce, you will need:
- 1 cup water
- ¼ cup soy sauce or tamari sauce
- 5 tsp brown sugar, firmly packed
- 1 TBSP honey
- ½ tsp ground ginger
- ½ tsp garlic powder
- 1 TBSP mirim
- 2 TBSP cornflour / cornstarch
- ¼ cup cold water
Add the 1 cup of water, soy sauce, brown sugar, honey, ginger, garlic and mirim to a small saucepan and whisk together.
Bring the mixture to a boil over medium heat.
Meanwhile, add the cornflour and ¼ cup cold water to a small bowl and whisk together.
Slowly add the cornflour mixture to the boiling sauce.
Reduce the heat to medium-low and continue cooking, whisking often, until the sauce has thickened to your desired consistency. This should take around 5 minutes.
Notes
Mirin is a type of Japanese rice wine. It contains less alcohol than sake, but it is sweeter than sake. Usually, a bottle of this can be found in the Asian aisle of the grocery store or at Asian stores.
