Homemade Chocolate Marshmallow Recipe

These seriously big and fluffy homemade chocolate marshmallows are perfectly soft, sweet and chocolatey. Taking a bite of this delicious chocolate puff, is like sinking your teeth into a fluffy cloud of marshmallow. This recipe is the best homemade chocolate marshmallow recipe you will find!

Chocolate Marshmallows

This recipe makes around 40 pieces of chocolate fluffy deliciousness! 

The thing with making marshmallows is that there are only a few steps that take around 15-20 minutes to complete before having to let them set for a few hours. But beware, though 15 minutes are a sticky 15 minutes, but it is all worth it in the end.

I used regular cocoa powder in this recipe, though if you want darker and more chocolatey marshmallows, try subbing out the regular cocoa powder for dark cocoa powder.

Blooming the Gelatine

Blooming the gelatine means to let some gelatine sit in water for a while. It will dissolve and start to thicken.

Using Chocolate Marshmallows

Other than straight up eating them, chocolate marshmallows can be

  • Added to a hot chocolate drink or hot cocoa drink
  • Dipped in chocolate dip and let set before eating
  • Use when making rocky road
  • They make a fun decoration for cakes or cupcakes
  • Use these marshmallows to replace store-bought ones when making s’mores
  • Use them as a topping on your ice creams, sundaes and milkshakes
  • Wrapped in a clear treat bag and give them away as gifts

Variations You Could Try

  • Mocha – Add some instant coffee when you add the cocoa powder
  • Choc Orange – Add about 1 ½ tsp of orange extract when adding the cocoa powder
  • Chilli Choc – Add about ½ tsp cayenne pepper to the cocoa powder before adding to the mixture
  • Choc Peppermint – Add 2 tsp peppermint extract when you add the cocoa powder
  • Maple syrup or golden syrup could be substituted for the honey

Storing Homemade Chocolate Marshmallows

Store the finished marshmallows in an airtight container at room temperature for around 3 to 4 days.

If you find that they become sticky, take off the lid and allow them to dry for a short period of time.

Ingredients for Chocolate Marshmallows

To make these marshmallows, you will need:

Syrup

  • ½ cup cold water
  • 2 ¼ cups white (granulated) sugar
  • ½ cup unsweetened cocoa powder
  • 6 TBSPP light corn syrup
  • 4 TBSP honey
  • ½ tsp salt
  • 1 tsp vanilla 

Gelatine

  • 6 tsp unflavoured gelatine powder
  • ½ cup cold water

Topping

  • ½ cup chocolate chips

Cutting

  • ¼ cup Cocoa powder
  • ¼ cup Icing mixture

Making Homemade Chocolate Marshmallows

Line a deep 9 x 12 inch glass dish with baking paper (parchment paper) making sure to line the sides. Then spray the paper lightly with oil.

Next, make the gelatine mixture.  In the bowl of your stand mixer, add the cold water then sprinkle the gelatine powder on top. With the whisk attachment on, stir to combine the let it sit to bloom.

Add the syrup ingredients except the vanilla – the water, sugar, cocoa powder, corn syrup, honey, and salt to a large saucepan with high sides.

Over medium-high heat, stir and bring to a rolling boil.

Using a candy thermometer, bring the mixture to 116˚C (240°f ) or softball. Do not stir the mixture.

Once the syrup mixture has reached the temperature (softball stage), turn off the heat and let it cool to around 99˚C (210˚F).

With the whisk attachment on, turn the stand mixer onto low speed and gently pour the syrup into the gelatine mixture.

Once all the syrup mixture is in, add the vanilla and then gradually increase the speed to high and whip until it thickens and soft peaks form.

Pour the marshmallow mixture into the prepared dish.

Smooth out the top of the marshmallow and then sprinkle the chocolate chips on top.

Set aside for 8 to 10 hours or overnight.

Once set, remove the chocolate marshmallow from the dish by lifting the paper out of the dish.

Mix the cocoa powder and icing mixture together and sprinkle some on top of the marshmallows.

Cut into 1 – 2′ strips, then into 1 – 2′ cubes. Clean the knife between cuts for a smooth slice.
