Homemade Caesar Salad Dressing
This delicious Caesar Salad Dressing contains no anchovies which makes it great for vegetarians or those who are allergic to shellfish. In saying that, check your Worcestershire sauce carefully as traditional versions of this sauce may contain anchovies. You should be able to purchase brands that do not contain anchovies.
Ingredients You Will Need
- ⅓ cup mayonnaise
- 2 teaspoons Dijon mustard
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 1 tablespoon white wine vinegar
- Salt and freshly ground black pepper, to taste
- ½ cup olive oil
- ½ cup freshly grated Parmesan cheese
Making Caesar Salad Dressing
In a blender jar or food processor bowl, add the mayonnaise, Dijon mustard, garlic, lemon juice, Worcestershire sauce, white wine vinegar, salt, and black pepper.
Puree the ingredients on low until totally mixed.
With the blender or food processor running on low, slowly add the olive oil in a steady drizzle.
Add the parmesan cheese and blend for 2 to 3 seconds longer or until well mixed.
Pour into a jar or serving jug. This dressing is best used immediately.

To make this recipe by hand, place the mayonnaise, Dijon mustard, garlic, lemon juice, Worcestershire sauce, white wine vinegar, salt, and black pepper in a bowl and whisk.
When mixed together, slowly add the olive oil in a steady drizzle while continuing to whisk. You need to mix until the oil in fully incorporated into the mixture. The dressing will look like thinned out mayonnaise.
Add the parmesan cheese and whisk until well mixed.
Make A Caesar Salad
To make a caesar salad: Serve the dressing over freshly chopped romaine lettuce with croutons and freshly grated Parmesan cheese.
