I found the recipe for these coconut raspberry muffins on the back of a coconut packet I bought from Aldi. It was very easy to make and tastes delicious!
Coconut Raspberry Muffins
- 5 cups SR Flour
- 60 g melted butter
- 400 ml milk
- 200 g desiccated coconut
- 1 cup caster sugar
- 1 egg
- 1 1/2 cups frozen raspberries
- 100 g white chocolate coarsely chopped
- Preheat oven to 180C. Grease muffin tin. Mix all ingredients toghter until well combine.
- Pour into muffin tin. Bake for 20-25 mins. Cool for 5 mins before turning out.
- Makes 12 large muffins.
