Corn Beef Fritters

We had some left over corn beef and I was wondering what to do with it, when I thought of fritters. We hadn’t had them before, but I remember having them as a kid. Fritters are a great way to use up left over ham and vegetables.

Ingredients

  • 3 cups Self Raising Flour
  • 2 cups milk
  • 2 eggs
  • salt and pepper to taste
  • 1 – 2 cups diced meat and/or vegetables
Prevent your screen from going dark

Instructions

  • 3 cups Self Raising Flour
  • 2 cups milk
  • 2 eggs
  • salt and pepper to taste
  • 1 – 2 cups diced meat and/or vegetables
  • Sift the flour into a bowl.
  • Add the milk and eggs and mix well with a whisk until all lumps are gone.
  • Add salt and pepper to taste and mix.
  • Stir through meat and/or vegetables.
  • Heat oil in a frypan.
  • Drop spoonfuls of mixture into the hot pan and cook until browned and then turn over.
  • Cook until browned on the other side.
  • Repeat until all mixture has been used up.
  • Serve while still hot.
