We had some left over corn beef and I was wondering what to do with it, when I thought of fritters. We hadn’t had them before, but I remember having them as a kid. Fritters are a great way to use up left over ham and vegetables.
Corn Beef Fritters

- 3 cups Self Raising Flour
- 2 cups milk
- 2 eggs
- salt and pepper to taste
- 1 – 2 cups diced meat and/or vegetables
Instructions
- 3 cups Self Raising Flour
- 2 cups milk
- 2 eggs
- salt and pepper to taste
- 1 – 2 cups diced meat and/or vegetables
- Sift the flour into a bowl.
- Add the milk and eggs and mix well with a whisk until all lumps are gone.
- Add salt and pepper to taste and mix.
- Stir through meat and/or vegetables.
- Heat oil in a frypan.
- Drop spoonfuls of mixture into the hot pan and cook until browned and then turn over.
- Cook until browned on the other side.
- Repeat until all mixture has been used up.
- Serve while still hot.
