This butterscotch lattice slice is so delicious, with a biscuit crust and a soft, creamy middle.

Butterscotch Lattice Slice

This slice is easy to make and sets very well with the help of the instant pudding. I used butterscotch flavoured instant pudding, but you could use any flavour you wish. I have also tried it with vanilla and it was delicious.

I normally only purchase these Lattice Biscuits when on sale, so when we have this slice, it is a real treat and is devoured very quickly.

For the topping, I just sprinkle with icing sugar before serving, though you could make a plain or lemon-flavoured icing and lightly spread it over the top layer of the biscuits. You could even add some passionfruit to the top of the icing.

Ingredients
  

  • 1 pkt instant pudding - butterscotch flavour
  • 1/4 cup castor sugar
  • 1 1/2 cups milk
  • 1/2 tsp vanilla essence
  • 1 pkt Arnott's Lattice Biscuits

Instructions
 

  • Line a lamington tray with baking paper and 1/2 of the packet of Lattice Biscuits.
  • Place instant pudding and castor sugar into a bowl.
  • Slowly add milk and vanilla essence while stirring.
  • Beat until the mixture is thick.
  • Spoon onto the lattice biscuits, making sure to level out the top.
  • Place the rest of the lattice biscuits on top.
  • Place in the fridge for around 1 hour to set completely.
  • Cut and serve!!

Notes

You can use any flavour of instant pudding like chocolate, vanilla, caramel or strawberry.
I sprinkled with icing sugar before serving, you could also drip on some icing.
