Then you will want to try this amazing delicious recipe! In around 30 minutes, you will have a delicious, moist slice with the most amazing brown butter icing that can be served for those morning and afternoon teas with a cuppa or pack a slice for your kids to enjoy for lunch while out!
Brown Butter Icing
These bars have what is known as brown butter icing which adds a whole new dimension of flavour to your baked goods.
To make this icing, butter is cooked over medium low heat until it starts to brown. Then removed from heat and the rest of the ingredients are mixed in.
Ingredients to Make these Bars
To make these banana bread bars, you will need:
- sour cream
- sugar
- butter
- eggs
- bananas
- vanilla extract
- plain flour
- bicarbonate of soda / baking soda
- salt
- chopped walnuts – optional
- butter
- icing mixture
- vanilla extract
- milk
Making Banana Bread Bars
In a large bowl, beat the butter, sugar, sour cream and eggs until light and creamy.
Blend in the mashed bananas and the vanilla extract.
Mix through the flour, bicarb soda, and salt. Mix well to combine.
Stir through the chopped walnuts, if using.
Spread the batter evenly into your prepared pan and bake until golden, about 25-30 minutes.
To make the icing, place the butter into a medium-sized saucepan and heat until melted and boiling.
Boil until it turns a light brown colour, then remove from the heat.
Add the icing mixture, vanilla extract and milk and whisk together until smooth. It will be slightly thicker than a glaze, though still thinning than icing.
Spread this icing mixture over warm banana bread bars.
Place the slice in the fridge until it is cool, then slice into bars.
Storing these Bars
Once cooled and cut, store in an airtight container. If you live in a cool climate, you may be able to keep them at room temperature for a day or two. For us, I personally keep them in the fridge where they last up to one week.
Banana Bread Bar Tips and Tricks
- If you don’t have enough bananas, top up the rest of the amount with apple sauce.
- This recipe can be halved if desired and baked in a smaller 8 x 8 inch pan.
- You could try substituting gluten free flour for the plain flour, though I personally haven’t tried this.
- ½ cup chocolate chips could also be added to the batter for a chocolate fix.
- Coconut oil would be a good swap instead of butter
- Greek yoghurt or non dairy yoghurt could be used in place of the sour cream.

Banana Bread Bars
- 1 ½ cups sugar
- 300 ml sour cream
- ½ cup butter, softened
- 2 eggs
- 1 ¾ cup ripe bananas, mashed (I used 4)
- 2 tsp vanilla extract
- 2 cups plain flour
- 1 tsp bicarb soda
- ¾ tsp salt
- ½ cup chopped walnuts, optional
Brown Butter Icing
- ½ cup butter
- 4 cups icing mixture
- 1 ½ tsp vanilla extract
- 3 TBSP milk
Instructions
Banana Bread Bars
- Heat oven to 180˚C. Grease and flour a large lamington tray, about 15x10 inch.
- In a large bowl beat together sugar, sour cream, butter and eggs until creamy.
- Blend in the mashed bananas and vanilla extract.
- Add the flour, bicarb soda and salt and blend. Stir in walnuts.
- Spread batter evenly into pan.
- Bake for 25-30 minutes or until golden.
Brown Butter Icing
- In a saucepan, heat butter until boiling.
- Let it turn a delicate brown and remove from heat.
- Add icing mixture, vanilla essence and milk.
- Whisk together until smooth - thicker than a glaze but thinner than icing. Spread the icing over the warm bars.
- Refrigerate until cool and then slice into bars.
