Baked Chocolate and Strawberry Cheesecake
This cheesecake is a lovely baked one full of chocolate and strawberries. As it is a baked cheesecake, it is not as sweet as a no-baked one, but it is still tasty.
To make this cheesecake, you will need to make the base first and baked it. Then, make the filling of the cheesecake and when the base is cool, pour the cream cheese filling mix onto the base and bake in the oven for 1 hour, until set.
When cool, decorate the cheesecake with chocolate ganache and extra strawberries.

Baked Chocolate and Strawberry Cheesecake

Base
- 200 g pkt chocolate ripple biscuits
- 50 g butter melted
Cheesecake Filling
- 225 g milk chocolate grated
- 500 g cream cheese
- 250 g strawberries, diced small
- 30 g caster sugar
- 4 eggs
Decoration
- extra strawberries
- whipped cream
- grated chocolate
Chocolate Ganache
- 200 g milk or dark chocolate, chopped
- 200 ml thickened cream
Instructions
- Line a 20cm springform pan with baking paper.
- Crush the biscuits and then mix well with the melted butter.
- Add to the prepared pan and push down flat.
- Bake for 10 mins at 180C. Let cool.
- Beat the cream cheese until soft and then add the sugar and the grated chocolate.
- Add the eggs and mix well.
- Add the strawberries and mix well.
- Pour the mixture over the base and bake 180C for about an hour, until set.
Chocolate Ganache
- Chop the chocolate and place in a mixing bowl.
- In a small saucepan, gently heat the cream over medium heat, bringing just to the boil.
- Pour the cream over the chocolate and whisk until smooth.
- Allow to cool slightly beofre pouring over cheesecake.
