Bacon and Cheese Loaded Fries

Crispy fries topped with cheese, bacon bits and spring onion make the perfect appetiser or side dish for your family meal, party or pot luck dinner. It’s easy to whip up a large batch of these bacon and cheese loaded fries which will disappear in no time.

Bacon and Cheese Loaded Fries

Loaded fries are quick and easy to make, taste amazing and make a great side to burgers, pizza or even a good piece of steak.

Tips for Making Loaded Fries

  • When making in the air fryer, make sure to shake a couple of times to help the fries bake more evenly. When cooking in the oven, turn them over on the tray halfway through cooking.
  • Most hard cheeses will work, make sure it is grated or shredded before using.
  • I like to return the fries to the oven to melt the cheese before serving. You don’t have to do this. You can just sprinkle on the cheese and let it melt slowly from the heat of the fries.
  • Fried white onion or pink onion could be added to the top of the fries as well.
  • Warm cheese sauce could be drizzled over the fries.
  • Serve with ranch sauce, garlic aioli or greek yoghurt instead of sour cream.
  • Sprinkle pickled jalapeños over the top for a lovely flavour.
  • Instead of fries, try using wedges or French fries or sweet potato fries
  • The bacon can be substituted for pancetta

Ingredients for Loaded Fries

  • 900g – 1kg pkt fries, frozen
  • ⅔  cup cheese, shredded – Can use  mozzarella, gouda, edam, Colby or parmesan
  • 1 cup cheddar cheese, shredded
  • 1 cup bacon bits
  • ⅔  cup sour cream
  • 3 spring onions or chives, sliced
  • Seasonings of your choice – eg. sea salt, chilli powder or chicken salt

Storing Leftovers

If you do manage to have some leftovers, they can be stored in the fridge in an airtight container for up to 2 days.

To reheat, place them on a lined baking tray and bake in the oven until they are hot and crispy, around 10 minutes, at 200˚C (400˚F).

Making Bacon and Cheese Loaded Fries

In the Oven 

Preheat oven to 210˚C (410˚F).

Place the frozen fries on a lined baking tray in a single layer.

Bake for 20 minutes, turning half way through, until desired crispiness is reached.

Meanwhile, dice the bacon and fry in a frypan until crispy.

Wash and slice the spring onions and put to the side.

Remove tray from over and pile up the fries into the middle of the tray. 

Sprinkle with your choice of seasonings. 

Sprinkle the cheese and bacon bits on top.

Place the tray back into the oven for about 5 minutes to melt the cheese.

Remove from oven and place a large dollop of sour cream on top and sprinkle with sliced spring onions.

In the Airfryer

This recipe could also be made in the air fryer, though you will need to do it in a couple of lots.

Line the air fryer basket with aluminium foil.

Place a single layer of fries in the air fryer basket and air fry for 15-20  minutes until desired crispiness is reached. Shake the basket 2 to 3 times during cooking.

Meanwhile, dice the bacon and fry in a frypan until crispy.

Wash and slice the shallots and put to the side.

When done, bring the fries into the centre of the basket and cover with the cheeses and bacon bits.

Air fry for 3 to 5 minutes until the cheese is melted.

Remove from air fryer, place a large dollop of sour cream on top and sprinkle with sliced spring onions.
