Ambrosia salad is a classical dish which is a lovely variation on the traditional fruit salad. If you haven’t tried Ambrosia Salad, you are in for a treat.
Ambrosia Salad
There are many different variations on this salad, from different fruits, to whipped cream to cool whip instead of sour cream. Though the fruit in this salad is all tinned, you can use fresh if desired. I have on occasion and have loved it. With the marshmallows, I use the mini marshmallows as they are a great size, though you can use full size marshmallows, which you can chop up to desired size.
Nuts can also be added to the salad or just on top for serving. Toasted nuts are a lovely, crunchy addition to this already amazing salad. Another addition would be cherries, especially at Christmas time. About 280g of tinned cherries, drained would be lovely.
Ambrosia salad is a perfect salad that can made a day ahead, as it gets better, the more time it sets.
Here are two different variations that I like to make, the second with whipped cream is a little sweeter than the one with sour cream, though they are both amazing.
Ambrosia Salad

- 1 tin (310g) mandarin segments, drained
- 1 tin (432g) crushed pineapple, drained
- 300 ml sour cream
- 1-2 TBSP desiccated coconut
- 4 cups mini marshmallows
Instructions
- In a large bowl, add the mandarin, pineapple, coconut and marshmallows.
- Fold through the sour cream.
- Cover and refridgerate for at least 1 hour before serving.

- 1/2 tin (412.5g) peaches, drained
- 1/2 tin (412.5g) apricots, drained
- 1-2 TBSP desiccated coconut
- 4 cups mini marshmallows
- 300ml thickened cream, whipped
Instructions
- In a large bowl, add the peaches, apricots and coconut.
- In another bowl, whip the cream until soft peaks form.
- Fold the cream through the peaches and apricots.

We usually use tinned boysenberrys whipped cream boysenberry yoghurt and a selection of pink and white marshmallows usually the normal size cut into either halves or quarters so yummy. I have never seen it made with other fruits before but sure looks interesting.
